Molokhiya consists of the leaves of the jute mallow plant. This green soup represents a primary culinary pillar across the Nile Valley and the Levant. Historical records trace the consumption of the plant to the Pharaonic era. A persistent legend identifies the dish as a medicinal broth for royalty. Fatimid Caliph Al-Hakim bi-Amr Allah banned the consumption of the leaves in the tenth century. This prohibition allegedly stemmed from the perceived aphrodisiac qualities of the plant. Modern preparation involves a meticulous chopping process using a curved blade called a makhrata. The distinctive mucilaginous texture defines the dish. Chefs finish the soup with the tasha; this sizzle occurs when fried garlic and coriander hit the broth. The preparation remains a staple of regional home cooking.
