Brik constitutes a fundamental element of Tunisian culinary heritage. The name derives from the Turkish "börek." This terminology reflects the Ottoman influence on Maghrebi cuisine. The dish utilizes malsouka; this paper-thin pastry dough provides a distinct elastic property. Fillings typically include tuna, parsley, and capers. The addition of a whole raw egg remains the defining feature. The chef deep-fries the folded pastry until the shell becomes translucent and brittle. Technical success requires maintaining a liquid yolk despite the high heat of the oil. This preparation appears daily on Tunisian tables during the month of Ramadan.
